My grandmother tried to teach me how to shape the kibbeh using my thumb and forefinger, but I think it was a lost cause from the beginning. In the time I finished one, she had a tray of 40-50 kibbehs finished, each to perfection with that slight point on top. Thank Goodness for the Kitchenaid! In its infinite wisdom, Kitchenaid mixers have an attachment that actually shapes the kibbeh dough perfectly into tubes. You just have to close one end, fill it, and then close the other end. When I figured this out, I realized – hey, I can do this. Long ago, my father Abe took a foot long piece of broom handle and sanded it down for use when making kibbeh. I put the tube of dough around the stick, close one end then remove it to fill it. Voila! Of course there are many more tricks to making kibbeh – like carefully preparing the dough.
