Food is very much a part of Sephardic Jewish culture and is heavily influenced by the topography and environment in the Middle East. The preparation of certain foods at certain times of the year or special meals cooked in preparation for the Sabbath were a woman’s contribution to conveying Sephardic Jewish culture. Vegetables are stuffed and used in endless salads based on seasonal availability. Fruits, like apricots, dates and figs are used in cooking. The endless availability of almonds and pistachios results in their abundance in our cooking. And of course lemon, grown in endless lemon groves, provide a tang to our food.
