We drove from Casablanca to Fez, stopping along the way in Rabat and Meknes. Rabat is the capital of Morocco and there we stopped at the official palace of the king. In Meknes we stopped at a Berber Jewish cemetery. None of the graves are marked, as is the custom of the Berbers. There as a wall where rabbis were buried in the wall. Then we crossed the street to an ancient Jewish school and synagogue. The Torah on display was 500 years old and the construction was ancient with a mikvah below the synagogue.

We went to lunch in the Fez Medina, having out first real Moroccan lunch. There was a display of Moroccan salads, mezzeh style, accompanied by a patella and couscous. The couscous is prepared separately and then the boiled veggies are added on top. A sauce accompanies the couscous and is mixed in with the veggies and meat if it is a meat couscous.

We were guided through the Old Medina of Fez, through a narrow labyrinth of endless little shops, lined with fresh and dried fruit, nuts and all sorts of wares. We constantly had to move aside for a cart or donkey to pass, the same way they passed thru the Median 1000 years ago. No cars can come here, the lanes so narrow even humans want to push at the walls. Herbs are sold in fresh bunches from carts. We were given mint to put to our nose as we visited an ancient tannery, where men tanned hides and died them in endless rows of natural tan barrels.  

Desserts have been a fusion between traditional desserts and modern ones. In the Medina you find the fried doughs with the honey glaze in a variety of shapes along with endless shops with dried fruits. There are also the nuggets, a variety of nuts and flavors melted together into blocks of candy that literally have to be chopped up into nuggets. We saw one hotel that took the nuggets and blended them into a mousse  - very interesting.
