Passover Ingredient Substitutions
- 1 oz unsweetened baking chocolate = 3 TBS cocoa powder and 1 TBS oil or margarine
- 1 C confectioner’s sugar = 1 C sugar plus 1 TBS plus 1 TBS potato starch
- 1 C all-purpose flour = ½ cup matza cake meal plus ¼ to 1/3 C potato starch
- 1 TBS all-purpose white flour = ½ TBS potato starch
- 1 C cornstarch = 7/8 C potato starch
- 1 C buttermilk = 1 TBS lemon juice plus 1 cup nondairy creamer; mix and steep for 5 minutes
- 1 C corn syrup = 1 ¼ C sugar an 1/3 C water
- 1 honey = 1 ¼ C sugar and ¼ C water
- 1 tsp cream of tartar = 1 ½ tsp or 1 ½ tsp vinegar
- 1 C milk= ½ C fruit juice and ½ C water
- 1 egg = ¼ cup applesauce
- 1 C Graham cracker crumbs = 1 C ground Passover cookies
- 1 C matzah cake meal = 1 C plus 1 TBS finely ground matzah meal
- One can = one and a little skillet with oil ½ to its use” seen as stocks class one a monthly bills rose water 1 teaspoon baking soda

- 1 C sweetened condensed milk = 1 C brown sugar, 2 eggs, 2 TBS potato starch, ½ tsp baking powder and 4 TBS margarine
- 1 cup soy sauce = 4 TBS balsamic vinegar, 2 tsp dark brown, 1 ½ C beef broth, 2 tsp brown sugar, dash ginger, garlic powder, white pepper and salt
